Chicken Noodle Casserole
Mary Beth Updike of Ottowa, Illinois sent us this recipe created by her mom. She says that nothing turns a day around quicker than coming home to this dish.
2 T. margarine
2 T. all-purpose flour
1 t. chicken bouillon granules
1 c. boiling water
10-3/4 oz. can cream of chicken soup
1-1/2 c. cooked chicken, diced
8-oz. pkg. wide egg noodles, cooked
1 c. potato chips, crushed
Melt margarine in a large saucepan over medium heat; stir in flour. Dissolve bouillon in boiling water; add to pan. Stir in soup and chicken; heat through. Add noodles; pour into a greased 2-quart casserole dish. Sprinkle with crushed chips. Bake, uncovered, at 325 degrees for 15 minutes. Serves 4.
