Summer Vegetable Salad
A medley of color, crunch and spice that's just right.

1 c. asparagus, chopped
1 c. tomatoes, chopped
1 c. zucchini, shredded
1 c. red pepper, diced
2 t. balsamic vinegar
2 T. olive oil
7 dashes hot pepper sauce

Cook asparagus in a small amount of boiling water until crisp-tender; drain. In a salad bowl, combine asparagus, tomatoes, zucchini and red pepper. In another bowl, whisk together vinegar, oil and hot pepper sauce. Combine dressing with salad just before serving. Makes 6 to 8 servings.

Since it's been pretty hot in these parts, we thought we'd share a summer recipe today...if your summer hasn't heated up yet (or if you don't have a steamy summer at all!) we're pretty sure everyone will still enjoy this treat.

Deluxe Ice Cream Sandwiches
Cool vanilla ice cream sandwiched between chewy, thin oatmeal cookies...yummy! 

1-1/2 c. butter, melted and slightly cooled
3 c. rolled oats, uncooked
1-1/2 T. all-purpose flour
1 t. salt
1-3/4 c. sugar
2 t. vanilla extract
2 eggs, lightly beaten
1/2 gal. vanilla ice cream, softened
Garnish: sprinkles

In a bowl, combine butter, oats, flour, salt, sugar and vanilla. Stir well to combine; add eggs and mix thoroughly. Cover baking sheets with lightly greased parchment paper. Spoon 1-1/2 tablespoons of dough for each cookie onto baking sheets about 3 inches apart, making 24. Flatten dough into circles. Bake at 375 degrees for 12 to 14 minutes, until golden. Let cool. Place a scoop of ice cream on half the cookies; sandwich with remaining cookies. Roll edges of sandwiches into sprinkles. Wrap individually and freeze until ready to serve. Makes one dozen.

Bonus tip: Try these with any flavor of ice cream! Butter pecan rolled in pecans, mint rolled in chocolate chip, pineapple sherbet rolled in sweetened coconut, chocolate rolled in more chocolate...well, you get the idea.

Happy Parents' Day!

Did you know that the fourth Sunday of July is Parents' Day? We didn't either...but what a great day to celebrate! In the spirit of the day, Vickie is sharing a story of gratitude...

When I think about what I’m most grateful for, my parents immediately come to mind.

From the time my kids were babies, they were right there to lend a hand. Whether it was taking Matt for a stroller ride on a sunny spring day or inviting Emily to come and play dress up...since they were only 3 blocks away from our little house, they were an everyday presence in our lives.

Not only did they love spending time with my kids, they both remembered how rare “alone time” is for Mom & Dad. I know this is why, every Friday without fail, they took both kids so Shelby & I could have “date night.” We would have dinner together and enjoy uninterrupted conversation...talking and planning what was next for our family.

I can’t imagine raising my children without such active and loving grandparents...I’m thankful for every day, every golden moment they so generously gave us.

Stroganoff Skillet
Shared with us by DeNeane Deskins of Marengo, Ohio, this recipe is time-tested and so delicious!

1 lb. ground beef
1 onion, chopped
10-3/4 oz. can cream
    of mushroom soup
1 c. sour cream
1 c. beef broth
1/2 c. water
3 c. wide egg noodles,
    uncooked

In a large skillet, brown ground beef and onion over medium heat. Gradually blend in remaining ingredients. Bring to a boil; reduce heat. Cover and simmer for 10 minutes or until noodles are tender. Makes 4 to 6 servings.

From the Meals in Minutes chapter, here's a family-pleasin' meal to try.

Hero Burgers
This recipe was originally shared with us by Kathleen McHale of Colonial Beach, Virginia. She writes, "We’ve been making this dish for 35 years and still love it." Sounds like a vote of confidence to us!

1-1/2 lbs. ground beef
10-3/4 oz. can tomato soup
1/3 c. onion, finely chopped
1 T. mustard
1 T. Worcestershire sauce
1 t. prepared horseradish
1 t. salt
1 loaf French bread, halved lengthwise and toasted
2 tomatoes, sliced
2 c. shredded Cheddar cheese

Thoroughly combine first 7 ingredients. Spread mixture on bottom half of bread, covering edges completely. Broil 4 to 5 inches from heat source for 10 to 12 minutes. Top with tomatoes and cheese; broil for 5 additional minutes or until cheese is melted. Cover with top half of bread. Cut into 3-inch slices and serve. Makes 4 servings.

Mark Your Spot in Style!

Whether you mark your favorite recipe in one of our cookbooks or keep track of the last page read in your summertime novel, today's project is so easy, you might want to make a bunch!

Button Bookmarks

You'll need:

• Vintage buttons in
  graduated sizes
• Jewelry & craft adhesive
  (We like E-6000.)
• Jumbo paperclips
• Felt scraps

Stack buttons together and glue to secure. Once dry, glue a paperclip to the back of your button stack and allow to dry. Cut a circle of felt just slightly larger than the bottom button in the stack, or at least large enough to cover the paperclip. Glue in place. We used pinking shears to cut out our felt scrap...gives it a fun edge, doesn't it?

Have fun making these easy little goodies...heck, they're so easy, maybe you'll whip a few up and give them as gifts too!

Here's one to inspire you from Farmers' Market Favorites,

Garden-Fresh Gazpacho
From Patsy Johnson of Salem, Missouri, this recipe is one of our favorites. Patsy writes, "I learned to make this when I was managing a restaurant. It can be very addictive in the summer months!" We're not surprised...the cool and savory combination can't be beat.

6 to 8 tomatoes, chopped
1 onion, finely chopped
1 cucumber, peeled and chopped
1 green pepper, chopped
2 T. fresh parsley or cilantro, chopped
1 clove garlic, finely chopped
1 to 2 stalks celery, chopped
2 T. lemon juice
salt and pepper to taste
4 c. tomato juice
4 drops hot pepper sauce
Optional: sour cream

Combine all ingredients except sour cream, if using, in a large lidded container or gallon-size Mason jar. Refrigerate until well chilled. Dollop servings with sour cream, if desired. Serves 12 to 15.

This week's Cookbook of the Week couldn't be more perfect for this time of year! Filled with fresh recipes you can whip up after a trip to the market plus year 'round favorites, it also includes tips for summertime fun, flea-market ideas and so much more.

Farmers' Market Favorites!

With chapters ranging from breakfast and snacks to mains, sides, salads and more, there's something here for any time of day!

Here's a recipe from our friend Wendy Lee Paffenroth - another one! - that's just a sample of the kinds of yummy summer recipes you'll find inside.

Market Veggie Triangles

2 to 3 cucumbers, chopped
8-oz. pkg. cream cheese, softened
1/4 c. mayonnaise
1 T. lemon juice
1/8 t. hot pepper sauce
1/2 c. red pepper, chopped
1/4 c. onion, finely chopped
1/4 c. green olives with pimentos, finely chopped
1 T. fresh parsley, chopped
salt and pepper to taste
12 slices wheat or pumpernickel bread, crusts trimmed
Garnish: green olive or cucumber slices

Place cucumbers in a strainer for 15 to 20 minutes to allow liquid to drain. Combine remaining ingredients except bread and garnish in a bowl. Stir until well blended. Add drained cucumbers; stir again. Refrigerate, covered, for 2 to 3 hours. Slice bread into triangles. Spread with cucumber mixture. Garnish as desired. Makes 4 dozen.

keep the dip chilled…country style!

 

 

A wire basket once used for canning jars is easily
turned into a silverware caddy. Mason jars can be
filled with silverware, while a thermos of blooms
sits nicely in the middle.

 

 

Transform a vintage vent cover into a terrific
recipe sorter. Find a vent with a back flap that
can become a stand when it’s pulled out. Then,
with a little cleaning and a fresh coat of paint,
it’s ready to hold your favorite recipe cards.

buttery pancakes...we LOVE breakfast! And it doesn't have to
be sunrise for us to enjoy it, either. Breakfast for dinner is one
of our favorite ways to end the day!

Here's one to inspire you from 101 Easy Everyday Recipes,

Apple-Stuffed French Toast
This recipe was shared with us by longtime contributor, Wendy Paffenroth of Pine Island, New York. With an amazing aroma and divine flavor, it's what breakfast is all about!

3 apples, peeled, cored and
    cut into chunks
1/4 c. brown sugar, packed
cinnamon to taste
2 eggs, beaten
1/2 c. milk
1 t. vanilla extract
8 slices wheat bread
Garnish: maple syrup

In a microwave-safe bowl, combine apples, brown sugar and cinnamon. Cover and microwave on high for 5 minutes, until apples are soft. In a separate bowl, stir together eggs, milk and vanilla. Spray a griddle or large frying pan with non-stick vegetable spray and heat over medium heat. Quickly dip the bread on both sides in the egg mixture and place on the griddle. Cook until golden on both sides. Place one slice of toast on a plate; put a scoop of the apple mixture in the middle. Top with another slice of toast. Drizzle with maple syrup. Makes 4 servings.

Sunday Meatball Skillet
From our very own Doris Stegner, a longtime part of our Gooseberry Patch family, her recipes are some of the best we've ever tasted. This one would be oh-so delicious alongside roasted green beans and a bowl of homemade applesauce!

3/4 lb. ground beef
1 c. onion, grated
1/2 c. Italian-flavored dry
    bread crumbs
1 egg, beaten
1/4 c. catsup
1/4 t. pepper
2 c. beef broth
1/4 c. all-purpose flour
1/2 c. sour cream
8-oz. pkg. medium egg
    noodles, cooked
Garnish: chopped fresh
    parsley

In a bowl, combine beef, onion, bread crumbs, egg, catsup and pepper. Shape into one-inch meatballs. Spray a skillet with non-stick vegetable spray. Cook meatballs over medium heat, turning occasionally, until browned, about 10 minutes. Remove meatballs and let drain on paper towels. In a bowl, whisk together broth and flour; add to skillet. Cook and stir until mixture thickens, about 5 minutes. Stir in sour cream. Add meatballs and noodles; toss to coat. Cook and stir until heated through, about 5 minutes. Garnish with parsley. Serves 4.
