Crab, Corn & Pepper Frittata
Our friend Stacie Avner from Delaware, Ohio, shared this recipe with us and it's a keeper!
6 eggs, beaten
1/4 c. milk
1/3 c. mayonnaise
1 c. imitation crabmeat
2 T. green onion, chopped
2 T. red pepper, chopped
1/3 c. corn
salt and pepper to taste
1 c. shredded Monterey Jack cheese
Whisk together all ingredients except cheese. Pour into a greased 10" pie plate. Bake at 350 degrees for 15 to 20 minutes. Sprinkle with cheese and bake for an additional 5 minutes, or until cheese is melted. Serves 4 to 6.
