2 T. blue cheese salad dressing
3 slices bread, toasted
4-oz. grilled boneless, skinless chicken breast
1 leaf green leaf lettuce
2 slices tomato
3 slices avocado
1 slice red onion
3 slices bacon, crisply cooked
Spread blue cheese dressing on one side of each slice of toasted bread. On the first slice of bread, place chicken breast on dressing; top with a second bread slice. Layer on lettuce, tomato, avocado, onion and bacon; top with remaining bread slice. Cut sandwich in quarters, securing each section with a toothpick. Makes 4 sandwich wedges.
