Friendship Peppermint Mud Pie
This festive recipe was shared with us by Lori Vincent of Alpine, Utah and is delicious any time of year! She writes, "Each year for Christmas, I get together with four dear friends for Christmas brunch. For the past 12 years, we’ve met once a month at a different home to craft together. It’s a great time for us to have “girl time” and share what’s going on in our lives. At Christmas, we traditionally eat pie, so whenever I make this recipe, I always think of my best friends!
14-oz. pkg. chocolate sandwich cookies,
crushed and divided
6 T. butter
1/2 gal. peppermint ice cream
16-oz. jar hot fudge ice cream topping
8-oz. container frozen whipped topping,
thawed
Set aside 1/4 cup cookie crumbs. Combine remaining cookie crumbs and melted butter in a large bowl. Toss to coat. Transfer to a greased 13"x9" baking pan; press firmly to cover bottom of pan. Slice ice cream into 1/2-inch slices and layer over crumb crust. Freeze until solid. At serving time, spoon fudge topping over ice cream and spread whipped topping to edges. Garnish with reserved cookie crumbs. Makes 12 servings.
