Ham & Cheese Muffins
Leanne Wheless of Borger, Texas shared this recipe with us. She writes, "A tasty portable breakfast…just the thing when you’re hurrying out the door!"
1 T. butter
1/3 c. dried, minced onion
8-oz. pkg. shredded Cheddar cheese
1-1/2 c. biscuit baking mix
1/2 c. milk
2 eggs
1 c. cooked ham, finely chopped
1 t. hickory smoked salt
Melt butter in a skillet. Add onion and cook over low heat until softened; set aside. Combine cheese and biscuit mix in a bowl; stir in milk and eggs just until moistened. Fold in ham, softened onion and salt. Fill 12 greased muffin cups 3/4 full. Bake at 425 degrees for 13 to 15 minutes, or until a toothpick comes out clean. Let cool for 5 minutes before removing from muffin cups. Serve warm. Makes one dozen.
