Layered Spinach Salad
Made heartier with the addition of tortellini, this salad was shared with us by Debra Alf of Robbinsdale, Minnesota...thanks, Debra!
8-oz. pkg. cheese tortellini, uncooked
2 c. red cabbage, shredded
6 c. spinach leaves, torn
1 c. cherry tomatoes, halved
1/2 c. green onion, sliced
8-oz. bottle ranch salad dressing
8 slices bacon, crisply cooked and crumbled
Cook tortellini according to package directions; drain and rinse with cold water. In a clear glass 13"x9" baking pan, layer cabbage, spinach, tortellini, tomatoes and green onion. Pour dressing evenly over top; sprinkle with bacon. Makes 8 servings.
