Sweet Jam Muffins
This simple shortcut recipe was shared with us by Sharry Murawski from Oak Forest, Illinois.
2 c. biscuit baking mix
2-1/2 T. sugar
1/4 c. cold butter
2/3 c. milk
1/4 c. jam, any flavor, divided
1/2 c. powdered sugar
2 t. orange juice
In a bowl, combine baking mix and sugar. Cut in butter until mixture resembles coarse crumbs; stir in milk just until moistened. Mixture will be thick. Spoon one tablespoon batter into each of 9 greased muffin cups. Top each one with one teaspoon jam. Spoon remaining batter equally into muffin cups. Bake at 425 degrees for 12 to 14 minutes, or until muffin tops are lightly golden. Cool in tin for 5 minutes; remove to a wire rack.
To Prepare Orange Glaze: Wisk together ingredients in a small bowl, until smooth. Drizzle muffins with Orange Glaze. Makes 9.
