With St. Patrick's Day coming up, we know some of you are planning to serve up something special on the 17th. We've found so much inspiration on Pinterest and have even started our own Luck O' the Irish board there...what are you planning?
Even if you're not fixing anything Irish-inspired on Sunday, we know you have a green recipe to share, be it salad, beans, spinach or maybe even your own Shamrock Shake!

All the flavors of our favorite sandwich come together in this creamy soup,
found in our cookbook, 101 Hearty Recipes!
Reuben Soup
Thanks to Sandy Roy from Crestwood, Kentucky, who shared this recipe with us!
2 T. butter
1 onion, chopped
4 c. chicken broth
1 c. sauerkraut, drained
and chopped
1 bay leaf
2 T. cornstarch
1/4 c. cold water
1 c. whipping cream
1 c. half-and-half
1 lb. deli corned beef,
cubed
1 c. shredded Swiss cheese
salt and white pepper to taste
Garnish: rye croutons
Melt butter in a medium saucepan. Add onion and cook until soft. Add broth, sauerkraut and bay leaf. Cover; reduce heat and simmer for 15 minutes. In a small bowl, mix cornstarch and water. Add to saucepan; stir in cream, half-and-half, corned beef and cheese. Simmer over very low heat for 10 to 15 minutes, stirring often; do not boil. Remove bay leaf and add salt and pepper. Ladle into bowls and sprinkle with croutons. Serves 6.

Bruschetta Pizza
Madonna Alexander of Chicago, Illinois shared this recipe with us. She writes, "If you can, prepare the bruschetta mix early in the day. The longer the flavors blend, the better it tastes. You'll have some left over but that's okay. I made an omelet wtih this mix and it was awesome!" We love this recipe as a main dish, but cut your pieces smaller and it would make a tasty appetizer to share too.
10 roma tomatoes, chopped
5 to 6 cloves garlic, minced
2 T. fresh basil, chopped
1/2 red onion, finely chopped
1/4 c. plus 1 T. olive oil, divided
1/2 t. pepper
1/4 t. garlic salt
1/4 c. balsamic vinegar
13.8-oz. tube refrigerated pizza crust dough
1/2 c. pizza sauce
8-oz. pkg. shredded Italian-blend cheese
dried oregano to taste
In a large bowl, combine tomatoes, garlic, basil, onion, 1/4 cup oil, pepper, garlic salt and vinegar. Stir to blend; drain. Place pizza crust dough on an ungreased baking sheet. Spread with pizza sauce. Top with 1-1/2 to 2 cups tomato mixture. Sprinkle on cheese and oregano. Drizzle remaining oil over top. Bake according to pizza crust dough package directions. Serves 6.

We're not sure how the weather is in your neck of the woods, but our "springtime" has turned mighty cold here in Ohio...there were actually snow flurries yesterday in the northern part of the state! Brrr...

Dilly Cucumber Salad
This recipe was shared with us by Debra Holme, all the way from Victoria, Australia! She writes, "When I moved here to Australia, I brought along my Gooseberry Patch books. I absolutely love your books. They make me a bit homesick, but they are comforting to look at and read. I’ve introduced them to some of my new Aussie neighbors. I am happy to share this recipe with you." We love the recipe, Debra, and we're glad we could bring you a little flavor of home!
4 c. cucumbers, peeled
and thinly sliced
3/4 c. sour cream
1 T. oil
1 t. sugar
1/2 t. garlic salt
1/2 t. salt
1/2 t. white vinegar
1/4 t. dill weed
Place cucumbers in a serving bowl. In a separate bowl, mix remaining ingredients except dill weed; add to cucumbers and toss to coat. Sprinkle dill weed over salad. Cover and refrigerate for at least one hour. Mix lightly before serving. Makes 5 to 6 servings.

Enjoying Easter Ham tomorrow?
Here are 5 yummy recipes that'll make
short work of any leftovers!
Ham & Swiss Cheese Rolls
Enjoy this recipe from 101 Christmas Recipes...Janet Stewart from Owensboro, Kentucky shared this recipe with us and it's one of our very favorites!
3/4 c. margarine
1-1/2 T. Worcestershire sauce
1/2 t. dry mustard
1-1/2 t. poppy seed
2 t. dried, minced onion
2 12-ct. pkgs. Hawaiian rolls
1 lb. thinly sliced deli ham
1/2 lb. sliced Swiss cheese
Combine margarine, Worcestershire sauce, mustard, poppy seed and onion in a small saucepan. Bring to a boil over medium heat; remove from heat. Slice individual rolls in half. Make sandwiches using bread, ham and cheese. Place sandwiches on an ungreased 15"x10" jelly-roll pan. Spoon margarine mixture over sandwiches. Bake, uncovered, at 350 degrees for 15 minutes. Makes 12 servings.
Cheesy Ham & Vegetable Bake
Jackie Flood from Geneseo, New York shared this recipe with us...you can find it in our cookbook, 101 Easy Everyday Recipes.
1-1/2 c. rotini pasta, uncooked
16-oz. pkg. frozen broccoli,
carrots and cauliflower blend
1/2 c. sour cream
1/2 c. milk
1-1/2 c. shredded Cheddar
cheese, divided
1-1/2 c. cooked ham, chopped
1/4 c. onion, chopped
1 clove garlic, minced
1/2 c. croutons, crushed
Cook pasta according to package directions; add frozen vegetables to cooking water just to thaw. Drain; place mixture in a 2-quart casserole dish that has been sprayed with non-stick vegetable spray. Mix sour cream, milk, one cup cheese, ham, onion and garlic; stir into pasta mixture in dish. Bake, uncovered, at 350 degrees for 30 minutes. Sprinkle with croutons and remaining cheese during last 5 minutes of baking. Serves 6.
Macaroni & Cheese Chowder
Enjoy this recipe from 101 Soups, Salads & Sandwiches...it's from Jo Ann's kitchen.
14-oz. can chicken broth
1 c. water
1 c. elbow macaroni, uncooked
8-oz. pkg. pasteurized process
cheese spread
1 c. cooked ham, diced
1 c. frozen corn
1 c. milk
Bring broth and water to boil over medium heat. Add macaroni and cook until tender, approximately 12 minutes. Reduce heat to medium-low; stir in remaining ingredients. Simmer and stir until cheese is melted. Makes 4 servings.
Scalloped Potatoes & Ham
This hearty recipe appears in 101 Homestyle Favorites and was shared by Lisa Quick from Clarksburg, Maryland.
2 T. onion, chopped
1/4 c. butter
1/4 c. all-purpose flour
1/2 t. dry mustard
1 t. salt
1/8 t. pepper
1-1/2 c. milk
2 c. shredded Cheddar
cheese, divided
6 c. potatoes, peeled, cooked
and sliced
1/2 lb. cooked ham, cubed
In a skillet over medium heat, sauté onion in butter; blend in flour, mustard, salt and pepper. Gradually add milk, stirring constantly until thickened; mix in 1-1/2 cups cheese and stir until melted. Remove from heat; add potatoes and toss to coat. Spoon into a greased 13"x9" baking pan; arrange ham and remaining cheese on top. Bake, uncovered, at 350 degrees for 30 minutes, until hot and bubbly. Serves 6.
Giant Stuffed Sandwich
You can use your leftover ham in place of the deli ham in this recipe from 101 Easy Entertaining Recipes. Thanks to Helen Williams from Heath, Ohio, who shared it with us.
1/2 c. quick-cooking oats, uncooked
1/2 c. boiling water
2 T. butter
16-oz. pkg. hot roll mix
3/4 c. very warm water
(110 to 115 degrees)
2 eggs, beaten
1/2 c. mayonnaise
1/4 c. coarse mustard
9-oz. pkg. sliced deli honey ham
6-oz. pkg. sliced deli roast turkey
6-oz. pkg. sliced deli roast chicken
1 to 2 tomatoes, thinly sliced
1 red onion, thinly sliced
8 slices Cheddar cheese
Garnish: shredded lettuce
Combine oats, boiling water and butter in a large bowl; let stand for 5 minutes. Dissolve yeast from roll mix in warm water; add to oat mixture. Stir well; mix in eggs. Add flour from roll mix; blend well. Form into a 10-inch circle on a greased 12" pizza pan. Cover; let rise for 25 minutes, until double. Bake at 350 degrees for 25 minutes. Cool on a wire rack; cut in half horizontally. Whisk together mayo and mustard; spread over cut sides. Assemble sandwich and cut into wedges. Serves 8 to 12.

Easter always meant a big family meal at Grandma's house. Her best dishes and lace tablecloth would set the table and there were always a few extra chairs pulled up for special guests. We loved getting together with aunts, uncles and cousins...maybe there'd even be an egg hunt in the backyard!

Sweet Ambrosia Salad
10-oz. can pineapple chunks,
drained
14-1/2 oz. jar maraschino
cherries, drained
11-oz. can mandarin oranges,
drained
8-oz. container sour cream
10-1/2 oz. pkg. pastel mini
marshmallows
1/2 c. sweetened flaked coconut
Combine fruit in a large bowl; stir in sour cream until coated. Fold in marshmallows and coconut; cover and chil overnight. Makes 8 to 10 servings.

Who doesn't love dessert? We sure do and we'll always have a soft spot for those family-favorite recipes that we've enjoyed for years. There's just no substitute for Mom's fudgy birthday cake and good old-fashioned cherry pie, still warm from the oven. Remember that impossibly high carrot cake or that perfect made-from-scratch lemon meringue?
Whether they're recipes passed on from Mom or Grandma or whether they're your own creations, these blue-ribbon-worthy cakes & pies are what we're rounding up today.

Here's one of our favorites from Sunday Dinner at Grandma's !
Strawberry Layer Cake
This blue-ribbon cake recipe was shared by Steven Wilson of Chesterfield, Virginia. He writes, "Spring was always a wonderful time of year growing up in North Carolina...it meant strawberry time. I remember going with Grandma to the strawberry farm to pick those huge, luscious red berries, often
eating as many as we put in the basket! She always used some of the fresh berries to make one of her delicious cakes to take to the Sunday night church social."
6-oz. pkg. strawberry gelatin mix
1/2 c. hot water
18-1/2 oz. pkg. white cake mix
2 T. all-purpose flour
1 c. strawberries, hulled and chopped
4 eggs
In a large bowl, dissolve dry gelatin mix in hot water; cool. Add dry cake mix, flour and strawberries; mix well. Add eggs, one at a time, beating slightly after each one. Pour batter into 3 greased 8" round cake pans. Bake at 350 degrees for 20 minutes, until cake tests done. Cool; assemble cake layers with Strawberry Frosting. Serves 12.
Strawberry Frosting:
1/4 c. butter, softened
3-3/4 to 5 c. powdered sugar
1/3 c. strawberries, hulled and finely chopped
Blend butter and powdered sugar together, adding sugar to desired consistency. Add strawberries; blend thoroughly.

Remember when Easter was all about a new dress, matching purse and those little white gloves? We do! With the holiday just a few weeks away, we wanted to share a few pictures from those days that were all about the baskets...and the candy!
(Who are we kidding? It's still about the candy sometimes!)
Can you spot Jo Ann in this photo? She's the one in the sweet bonnet holding her little purse. She remembers spending holidays with the whole family, including cousins pictured here.

"It took forever for Mom to get us all ready for church on Easter Sunday. When we got home, we always celebrated with a big family brunch. It was a lot of excitement and lots of fun too...including an egg hunt in the backyard!"

Emerald Isle Cupcakes
Shared by Jackie Smulski of Lyons, Illinois, these lucky little cakes are perfect for celebrating with your little leprechauns. Jackie writes, "These cupcakes are not only good for St. Patrick's Day but are also a refreshing treat to welcome the first day of spring!"
1-3/4 c. all-purpose flour
2/3 c. sugar
3.4-oz. pkg. instant pistachio
pudding mix
1-1/2 t. baking powder
1/2 t. salt
2 eggs, beaten
1-1/4 c. milk
1/2 c. oil
1/2 t. vanilla extract
few drops green food coloring
16-oz. container cream
cheese frosting
Garnish: candy sprinkles
In a bowl, combine flour, sugar, dry pudding mix, baking powder and salt. In another bowl, beat eggs, milk, oil and vanilla; add to flour mixture and mix until well blended. Fill paper-lined muffin cups 2/3 full. Bake at 375 degrees for 20 to 25 minutes, until a toothpick tests clean. Cool in tin on a wire rack. Add a few drops of food coloring to the frosting and frost the cupcakes. Garnish with sprinkles. Makes 1-1/2 dozen.
