Stuffed Pepper Casserole
Shared with us by Jonel Neely of Gainesville, Florida, this recipe has all the flavor of stuffed peppers, but in a quick-fix casserole!
1 lb. ground beef
1 red pepper, diced
1 green pepper, diced
1 zucchini, diced
1 onion, diced
1 clove garlic, minced
1/2 t. cinnamon
1/2 t. ground cumin
salt and pepper to taste
1 T. cider vinegar
1 T. sugar
26-oz. jar pasta sauce
1 c. shredded Cheddar cheese
1 c. shredded mozzarella cheese
8-oz. pkg. medium egg noodles, cooked
Garnish: fresh parsley
Brown beef in a large skillet over medium-high heat. Add peppers, zucchini and onion and cook until tender. Stir in garlic, cinnamon, cumin, salt and pepper; cook one minute longer. Remove from heat. In a bowl, stir together vinegar and sugar; mix in pasta sauce. Add to beef mixture; stir in noodles. Place in a lightly greased 13"x9" baking pan; top with cheeses. Bake, uncovered, at 375 degrees for 20 minutes, or until heated through. Garnish with parsley before serving. Makes 6 servings.
