This first recipe is from Our Favorite Game-Day Recipes and is sure to be a crowd-pleaser for the big game coming up!
Cranberry Cocktail Sausages
16-oz. can whole-berry cranberry sauce 1/3 c. seedless raspberry jam 1 t. cornstarch 1/2 t. hot pepper sauce 2 14-oz. pkgs. mini smoked sausages Optional: sliced green onion
Mix together all ingredients except green onion in a large saucepan over medium-high heat; stir frequently until simmering. Reduce heat to low. Cook, uncovered, for 15 minutes, stirring occasionally, until sausages are heated through. Place in a serving dish and sprinkle with green onion, if desired. Serves 6 to 10.

Mocha Mousse
1 c. semi-sweet chocolate chips 3 T. powdered sugar 3 T. brewed coffee 3 egg yolks 1-1/4 c. whipping cream, whipped
Melt chocolate over hot water in a double boiler. Add sugar and coffee; stir in egg yolks, one at a time. Stir until mixture thickens; remove from heat and let cool. Add whipped cream to chocolate mixture, blending well. Spoon into 2 serving dishes; cover and refrigerate one hour. Serves 2.

Day-After-Thanksgiving Soup
1 T. olive oil 2 carrots, chopped 2 ribs celery, chopped 1 onion, chopped salt and pepper to taste 1 bay leaf 2 qts. chicken stock 1-1/2 lb. cooked turkey, diced 2 T. fresh parsley, chopped Optional: 1 c. frozen peas 4 to 6 c. prepared stuffing, warmed
Warm oil in a large stock pot over medium heat; add in carrots, celery, onion, salt and pepper. Sauté until vegetables are crisp-tender. Add in bay leaf and stock; bring to a boil. Add turkey, reduce heat and simmer until vegetables are fully cooked, about 10 minutes. Stir in parsley and peas, if using. Remove bay leaf before serving. To serve, place a scoop of warmed stuffing into individual soup bowls. Ladle soup over stuffing in bowls. Serves 4 to 6.

Crunchy Biscuit Chicken Mary Makulec of Rockford, Illinois shared this stick-to-your-ribs recipe. She writes, “Chicken, beans, cheese and biscuits…what more could you want?” We couldn’t agree more!
2 c. boneless, skinless chicken, cooked 10-3/4 oz. can cream of chicken soup 1 c. canned green beans, undrained 1 c. Cheddar cheese, shredded 1/4 c. canned mushrooms, undrained 1/2 c. mayonnaise-type salad dressing 1 t. lemon juice 10-oz. tube refrigerated flaky biscuits 1 to 2 T. margarine, melted 1/4 c. Cheddar cheese croutons, crushed
In a medium saucepan, combine chicken, soup, green beans, cheese, mushrooms, salad dressing and lemon juice; heat until hot and bubbly. Pour hot chicken mixture into an ungreased 13"x9" baking dish. Separate biscuit dough into 10 biscuits. Arrange biscuits over chicken mixture. Brush each biscuit with margarine; sprinkle with croutons. Bake at 375 degrees for 25 to 30 minutes or until deep, golden brown. Makes 4 to 6 servings.

Mac & Cheese Nuggets

1/4 c. grated Parmesan cheese, divided 1-1/2 T. butter 2 T. all-purpose flour 3/4 c. milk 1-1/4 c. shredded Cheddar cheese 1/4 lb. American cheese slices, chopped 1 egg yolk, beaten 1/4 t. paprika 8-oz. pkg. elbow macaroni, cooked
Lightly grease mini muffin cups. Sprinkle with 2 tablespoons Parmesan cheese, tapping out excess. Melt butter in a large saucepan over medium heat. Stir in flour; cook for 2 minutes. Whisk in milk until boiling, about 5 minutes. Add Cheddar and American cheeses; remove from heat and stir until smooth. Whisk in egg yolk and paprika; fold in macaroni until well coated. Spoon rounded tablespoons of mixture into prepared tins; sprinkle with remaining Parmesan. Bake at 425 degrees until hot and golden, about 10 minutes. Cool for 5 minutes; carefully transfer to a serving plate. Makes 4 dozen.

The last chapter in this book is called Sweet Celebrations and it's filled with creative ideas for special occasion treats...we'll be sharing some photos and instructions from this chapter later in the week!

Peanut Butter Cup Cupcakes Shared with us by Kathy Murphy of Lawrence, Nebraska. Kathy writes, "I serve these at Sunday morning coffee time at church. There are never any leftovers!"
1/3 c. butter, softened 1/3 c. creamy peanut butter 1-1/4 c. brown sugar, packed 2 eggs, beaten 1 t. vanilla extract 1-3/4 c. all-purpose flour 1-3/4 t. baking powder 1 t. salt 1 c. milk 16 mini peanut butter cups
In a bowl, combine butter, peanut butter and brown sugar. Beat in eggs and vanilla. Combine flour, baking powder and salt; add to butter mixture alternately with milk. Fill paper-lined muffin cups half full. Press a peanut butter cup into the center of each, until top edge is even with batter. Bake at 350 degrees for 22 to 24 minutes, until a toothpick inserted on an angle toward the center tests clean. Cool in tin on wire rack 10 minutes. Remove from tin and cool completely. Makes 16.

Robert’s Corn Dip Thanks to Carole Snodgrass of Rolla, Missouri.
3 11-oz. cans sweet corn & diced peppers, drained 7-oz. can chopped green chiles 6-oz. can chopped jalapenos, drained and liquid added to taste 1/2 c. green onion, chopped 1 c. mayonnaise 1 c. sour cream 1 t. pepper 1/2 t. garlic powder 16-oz. pkg. shredded sharp Cheddar cheese corn chips
Mix all ingredients except corn chips together and refrigerate. Serve with corn chips for scooping. Makes about 6 cups.
Pizza Fondue Thanks to Michelle Golz of Freeport, Illinois.
1 lb. ground beef 1 onion, chopped 2 10-oz. cans pizza sauce 1 T. cornstarch 1-1/2 t. fennel seed 1-1/2 t. dried oregano 1/4 t. garlic powder 2-1/2 c. shredded Cheddar cheese 2 c. shredded Mozzarella cheese bread sticks
Brown ground beef and onion in a skillet over medium heat; drain. Add remaining ingredients except bread sticks; simmer until cheese melts. Serve hot with bread sticks for dipping. Serves 6 to 8.
Creamy BLT Dip Thanks to Barbara Thurman of Carlyle, Illinois.
1 lb. bacon, crisply cooked and crumbled 1 c. mayonnaise 1 c. sour cream 2 tomatoes, chopped Optional: chopped fresh chives
Blend together bacon, mayonnaise and sour cream; chill. Stir in tomatoes just before serving; sprinkle with chives, if desired. Makes 2-1/2 cups.

We first learned of this blog back in October of last year, when we had our Farmhouse Kitchen cookbook giveaway. To get the cookbook, folks filmed videos of themselves and their Gooseberry goodies. Tell us a little about yourself and your family.
Let's see, I'm married and have 3 beautiful children. We've been married 14 years this past Wednesday. I homeschool and love having my children home with me to watch them learn and grow. Though some days I just want to escape to Starbucks to drink coffee and eat a cookie! But thank goodness that isn't very often or I wouldn't fit in my pants.
We live in Florida on the east coast and have been here our whole married lives. It's
beautiful here and after all the snow storms you northerners have been getting I
like it even more! LOL!
What originally inspired you to start blogging?
A movie actually inspired me. In the movie she was talking about bloggers and
journaling and I was intrigued enough to look into it and the rest is history.
I actually spun my cooking blog off of my main blog because I found myself
making something delicious and then saying, "Oh, I gotta post this recipe." I really didn't intend for my main blog to house so many recipes so I finally
committed to doing a separate one. I'm a really fast typist so it doesn't really
take me that long to post them. Plus I then have them there for future
reference.
Actually when I was growing up I hated cooking. I never wanted to be in the
kitchen. And when I got married I didn't know how to cook. I remember actually
standing in the kitchen and realizing I was the one responsible for feeding us
and I almost started to cry! LOL! (It's a good thing he didn't know that! LOL)
But after about 6 months and 30 Hamburger Helpers later, I decided it was time
to get serious. And serious I got. At the time I barely had a hand mixer that
worked. Now I have a stand mixer, a Vita Mix Blender, Bread Maker, 3 Crockpots
and so on. LOL! I'm all about having good tools in the kitchen! Granted it took
a span of 14 years to get these, but I sure wouldn't want to be without them
now. I guess I had to prove to my husband that I was actually going to use them.
I think he's convinced now!
We know from your video that you're a big fan of our Christmas books...do you have a favorite project that you've made from one of them?
Oh I soooo love the Gooseberry Patch Christmas Series. I'm like a magnet when I
see them. One of my favorite projects is a fleece blanket that I made after
looking at the one in Book 6 page 55. It was so easy to do and it's so warm and
cozy. I wish I could share all the things I've made out of your books but we'd
be here a really long time.
You share so much humor and snapshots on your blog...tell us something that no one would guess about you.
Hmmm... that's tough because I'm pretty transparent on my blog. But I am
actually very shy. Which is probably why I never became a stand up comedian.
That or maybe I'm not as funny as I think I am!

Focusing all of our energy on cookbook publishing does mean one big change for Gooseberry Patch...we will no longer be offering a mail-order catalog. We know you’ll miss our “Country Store in Your Mailbox” as much as we will. But the future of Gooseberry Patch cookbooks is very bright. We are very excited about expanding our publishing so you’ll have lots of new cookbooks to enjoy for many years to come!
