Nicole's Cake Mix Cookies
There's nothing easier than a quick & simple cake mix cookie, and a batch of these from Big Book of Holiday Cooking are going to fill your cookie jar in no time flat.
1/4 c. butter, softened
8-oz. pkg. cream cheese, softened
1 egg yolk, beaten
1/2 t. vanilla extract
18-1/4 oz. pkg. butter pecan cake mix
Beat butter and cream cheese at medium speed with an electric mixer. Add egg yolk and vanilla; blend thoroughly. Gradually beat in dry cake mix. Dough will be slightly stiff. Cover and refrigerate for 20 minutes. Drop dough by rounded teaspoonfuls onto greased or parchment paper–lined baking sheets. Bake at 350 degrees for 14 minutes, or until lightly golden. Makes about 3 dozen.
