Pumpkin Peanut Butter Cup: Adding a little pumpkin and spice to a peanut butter cup elevates this candy favorite to a treat worthy of the dessert table. These might push you over your 15-minute mark, but they're so delicious and easy, we had to include them!
Ready to make some? Combine 1/2 cup of pumpkin, 2 to 3 tablespoons of powdered sugar, 1/4 cup of peanut butter and 1/2 teaspoon each of cinnamon and nutmeg. Once filling is smooth and sweet enough for you, set it aside. Melt 2 cups of semi-sweet chocolate chips in a microwave-safe bowl, stirring until smooth.
Now, add liners to your trusty mini muffin tin and to each cup, add 1 to 2 teaspoons of melted chocolate. You can eyeball the amount, so long as it completely covers the bottom of the cup. Set in the fridge to chill for 10 minutes or speed things up by putting them in the freezer.
Once chocolate is set, add a tiny amount of filling to each and then top with more melted chocolate, making sure all filling is covered. Pop the pan back in the fridge or freezer to firm up and that's it!
