To celebrate (or maybe to put you in the holiday mood if you're a scrooge!) here's a recipe from our book, Christmas Cookie Jar...
creamy white chocolate and peppermint tastes just like Christmas to us. A big thank-you to Sharon Tillman of Hampton, Virginia for sending it our way!
North Pole Candy Cane Fudge
2 10-oz. pkgs. white chocolate chips
14-oz. can sweetened condensed milk
1/2 t. peppermint extract
1-1/2 c. candy canes, crushed
1/8 t. red food coloring
Garnish: additional crushed candy canes
Combine chocolate chips and condensed milk in a saucepan over low heat. Stir until nearly melted; remove from heat and continue to stir until smooth and completely melted. Stir in extract, crushed candy and coloring. Spread evenly in an aluminum foil-lined, greased 8" x 8" baking pan. Sprinkle with additional crushed candy cane pieces, if desired. Chill for 2 hours; cut into one-inch squares. Makes 64 pieces.
