So many of you were excited to see more of our new cookbook, Dinners on a Dime, and here at Gooseberry Patch, we aim to please. Here's another delicious (and inexpensive) recipe found on page 153...it makes not just one but TWO hearty dinners!
Amy Steiner of Delta, Pennsylvania sent us her Grandma's recipe with this note:
My grandmother was quite the penny pincher...so much so that she even made a notation at the top of this recipe card that it only cost eight dollars to make! Nowadays it costs a little more, but since it makes two big casserole dishes, it's still economical.

Grandma's Beefy
Noodle Bake
16-oz. pkg. medium
egg noodles, uncooked
2 lbs. ground beef
3/4 c. celery, chopped
1/2 c. onion, chopped
2 10-3/4 oz. cans tomato soup
4-oz. can sliced mushrooms,
drained
2 T. water
1 t. salt
1/2 t. pepper
8-oz. pkg. shredded
Cheddar cheese
Cook noodles according to package directions; drain and set aside. Brown beef, celery and onion together in a skillet over medium heat; drain. Combine beef mixture, cooked noodles and remaining ingredients except cheese; toss to mix lightly. Spoon into 2 ungreased 2-quart casserole dishes. Sprinkle cheese over top. Bake, uncovered, at 350 degrees for one hour. Makes 2 casseroles; each serves 8.
