You don't need Gooseberry Patch to tell you that summertime is the best barbecue season...but you might need a new recipe to try! This one appears in our book, Patchwork Potluck, and it's one of our favorites.
Barbecued Beef Sandwiches
Shared by JoEllen Ferington of Fountain Hills, Arizona, all this recipe needs is some coleslaw and a handful of yummy chips to make a complete meal!
1/2 c. celery, minced
1 onion, minced
1-1/2 c. catsup
3 T. Worcestershire sauce
3 T. brown sugar, packed
2 T. cider vinegar
2 T. lemon juice
1-1/2 t. mustard
3/4 c. water
1 t. salt
3 to 3-1/2 lb. beef chuck roast
6 to 8 hamburger buns
Combine all ingredients except roast and buns in a medium saucepan. Simmer for 5 minutes, stirring occasionally. Cut roast in 2 to 3 pieces; place in a single layer in a roasting pan. Pour sauce mixture over roast. Cover and bake at 350 degrees for 2 to 3 hours, turning roast about every 30 minutes. Remove cover for last 30 minutes; sauce will thicken. Shred meat; discard excess fat and any bone. Serve on buns. Serves 6 to 8.
