As you can see from the photo, her recipe appears in our book, Dinners on a Dime. The article give a little background on the recipe and our cookbook...we thought we'd share Renee's recipe with you guys too!
Renee's Skillet Ham & Tomatoes
I came up with this recipe myself and my family loves it...I'm sure yours will love it also! It's a delicious low-cost, quick-fix meal, wonderful served with a tossed salad and hot rolls.
1 T. cornstarch
1 to 2 T. cold water
2 T. margarine
1 onion, chopped
2 c. cooked ham, chopped
2 14-1/2 oz. cans. diced tomatoes
3 c. cooked rice
1 to 2 T. soy sauce
Salt and pepper to taste
Mix cornstarch and water; set aside. Melt margarine in a skillet over medium heat. Add onion and ham; saute until onion is opaque. Add tomatoes with juice to skillet. Bring to a boil; stir in cornstarch mixture and cook until thickened. Turn down to low heat and add remaining ingredients. Cook and stir until heated through. Serves 8.
