Here's an extra goodie, just for our blog readers, from our book, Christmas Cookie Jar. Alberta Wagy of San Diego, California shared it with us...we hope you enjoy it!
Coconut Yule Logs
1-1/2 c. sweetened flaked
8-oz. pkg. cream cheese, softened
3 c. powdered sugar
1/2 t. vanilla extract
2 c. quick-cooking oats, uncooked
1/2 c. almonds, chopped
Spread one cup coconut on a baking sheet. Bake at 325 degrees for 7 to 10 minutes, tossing occasionally, until toasted. Set aside to cool. Beat cream cheese in a large bowl until creamy. Gradually add powdered sugar, blending well; add vanilla. Stir in oats, remaining coconut and almonds. Shape to form 2-inch logs; roll logs in toasted coconut. Store in an airtight container; keep refrigerated until ready to serve. Makes 3 dozen.
