Kim's Peach Cobbler
Shared with us by Beth Smith of Manchester, Michigan, this recipe comes together quick and only bakes for 20 minutes! Kim writes, "When I was first married, a co-worker shared this easy dessert with me. She has since moved on, but I'll always remember her every time I make this cobbler. Share a recipe and be remembered forever!"
1 c. sugar
1 egg, beaten
1 t. vanilla extract
1 c. all-purpose flour
15-oz. sliced peaches, drained
1/2 c. butter, melted
Stir sugar, egg and vanilla until well blended; mix in flour. Place peaches in the bottom of a lightly greased 9" x 9" baking pan. Pour batter over peaches; drizzle with melted butter. Bake at 350 degrees for 20 minutes, or until light golden and crunchy on top. Serves 6.
