With dozens of dinner (or lunch!) possibilities in Classic Comfort Foods, Super Supper Sandwiches and Dinner in a Dash, we've also included two chapters devoted to some of our favorite flavors: Mexican and Italian!
Fast Flavorful Fiesta and Pizza & Pasta...Pronto both offer family-friendly flavors that allow you to spice up weeknight dinners without the fuss...and without any ingredients other than the ones in your pantry already!
Today, we're sharing a recipe from the Italian chapter from our friend, Cheryl Lagler of Zionsville, Pennsylvania. Spinach Salad Pizzas is simple and clever...definitely one that we read and thought, "Why didn't we think of that before?"
Spinach Salad Pizzas
Cheryl writes, "I enjoyed this at a restaurant and decided to create my own version at home!"
Bake pizzas according to package directions; place pizzas on 4 serving plates. Top each pizza with one-quarter each of the spinach, tomato, mushrooms and cucumber. Drizzle 1-1/2 tablespoons ranch salad dressing over each pizza. Serves 4.
