Best-Ever Strawberry Shortcake
Shared by Emma Johnson of Lithopolis, Ohio, she writes, "My mom always made this shortcake when our strawberries ripened in early June. She received this recipe from her mother and it has always been a family favorite."
1/2 c. butter, softened
1 c. sugar
2 eggs, beaten
1 t. vanilla extract
1/2 c. milk
2 c. all-purpose flour
1 T. baking powder
1/4 t. salt
Garnish: sliced strawberries, whipped cream
In a bowl, combine butter and sugar. Beat with an electric mixer on medium speed until smooth; beat in eggs, vanilla and milk. In a separate bowl, mix flour, baking powder and salt. Gradually add flour mixture to butter mixture; mix well. Spoon batter into a greased 9"x9" baking pan. Bake at 350 degrees for 40 to 50 minutes, until a toothpick inserted near the center tests clean. Cut shortcake into squares; top with strawberries and whipped cream. Makes 9 servings.
