This week's Cookbook of the Week is one of our favorites because it was our first book full of all those quickie recipes we all love and NEED in this busy world of ours! It's a great collection (okay, we're a little biased) for any Mom who needs to get dinner on the table PRONTO but really, no matter who you are, we all have days like that, don't we?
Even if you're not pressed for time, no one wants to spend all day in the kitchen when you could be enjoying a hearty and delicious meal (or dessert!) with family and friends. If you agree, you'll love...
With chapters for everything from appetizers to desserts,
this book has it all. Let's take a look inside...
From the Meals in Minutes chapter, here's a family-pleasin' meal to try.
Hero Burgers
This recipe was originally shared with us by Kathleen McHale of Colonial Beach, Virginia. She writes, "We’ve been making this dish for 35 years and still love it." Sounds like a vote of confidence to us!
1-1/2 lbs. ground beef
10-3/4 oz. can tomato soup
1/3 c. onion, finely chopped
1 T. mustard
1 T. Worcestershire sauce
1 t. prepared horseradish
1 t. salt
1 loaf French bread, halved lengthwise and toasted
2 tomatoes, sliced
2 c. shredded Cheddar cheese
Thoroughly combine first 7 ingredients. Spread mixture on bottom half of bread, covering edges completely. Broil 4 to 5 inches from heat source for 10 to 12 minutes. Top with tomatoes and cheese; broil for 5 additional minutes or until cheese is melted. Cover with top half of bread. Cut into 3-inch slices and serve. Makes 4 servings.
