Here's a recipe from the Poultry chapter, shared by our very own Vickie...give it a try next time you're in the mood for Mexican food!
Cheesy Turkey Rellenos
Try tossing in some jalapeños for a hotter version!
4 4-oz. cans whole green chiles, drained and rinsed
1/4 lb. Pepper Jack cheese, sliced into 1/2-inch strips
2 c. cooked turkey, sliced into 1/2-inch strips
1/2 c. all-purpose flour
1/2 t. baking powder
1/4 t. salt
1/2 c. milk
3 eggs
2/3 c. shredded Cheddar cheese
Slice chiles up one side; remove seeds and spread open flat. Arrange in a greased 11"x7" baking pan. Fill each chile half with Pepper Jack cheese and turkey strips. Fold chiles closed and place seam-side down in dish. In a medium bowl, combine flour, baking powder and salt. Whisk together milk and eggs; slowly add to flour mixture, beating until smooth. Pour over chiles. Bake at 450 degrees for 15 minutes. Remove from oven and turn off heat. Sprinkle Cheddar cheese over top and return to oven until cheese is melted. Serves 6.
Vickie likes to enjoy this deliciously different casserole the day after Thanksgiving but you could get cooked turkey from the ready-to-eat section of your grocery store any time of year!
