Stovetop Caramel Apple Cobbler
This easy recipe was shared by Susi Shearer of Richmond, Indiana. With tender apples and a sweet, crunchy topping, it's irresistible!
8 apples, cored, peeled
and chopped
2 c. water
1/2 c. brown sugar,
packed
2 T. butter
1 c. mini marshmallows
1/2 c. chopped pecans
10 to 15 vanilla wafers,
crushed
16-oz. jar caramel
ice cream topping
Combine apples and water in a medium saucepan. Boil gently over medium heat for 10 minutes. Add brown sugar and butter; mash apples in the pan gently with a spoon. Stir in marshmallows and pecans. Remove from heat; add vanilla wafers. Spoon into bowls; drizzle with topping. Makes 4 to 6 servings.
