Slow-Cooker Sweet Potato-Apple Soup
Kelly writes, "This is a warming, delicious sweet soup perfect for the cold fall and winter months! Top with cheese and serve with hot rolls for a filling weeknight dinner. Because you purée this soup in the end, you could leave the sweet potato skins on for a fiber boost."
2 lbs. sweet potatoes
1/4 c. water
1 apple, peeled, cored and thinly sliced
1/2 onion, finely chopped
1 stalk celery, chopped
4 c. broth or water
salt and pepper to taste
Place unpeeled sweet potatoes in a baking pan; add water. Cover with aluminum foil. Bake at 350 degrees for one hour. Remove from oven; let sweet potatoes cool and peel off skins, if desired. Transfer sweet potatoes to a slow cooker; add remaining ingredients. Cover and cook on low setting for 8 to 10 hours. Purée soup with an immersion blender, food processor or regular blender.
