With only five ingredients and no oven required, this Peanut Butter Pie from our cookbook Potluck Family Favorites is one of our go-to pies for any occasion. Light & dreamy, cool & creamy...this peanutty pie is always a hit!

Peanut Butter Pie
Our good friend Carol Nebzydoski shared this delicious recipe with us. Carol says, "My kids have always loved this creamy peanut butter pie. My 21-year-old son even called from Texas while he was in the army and asked for the recipe so he could make it for a small gathering of friends before they left for Iraq."
1/2 c. sugar
1/2 c. creamy or crunch peanut butter
3-oz. pkg. cream cheese, softened
12-oz. container frozen whipped topping, thawed
9 inch graham cracker crust
Optional: additional whipped cream, chopped peanuts
Combine sugar, peanut butter and cream cheese in a large bowl; stir until well blended. Fold in whipped topping. Spoon mixture into piecrust. Cover and chill at least 2 hours before serving Top with additional whipped cream and chopped peanuts, if desired. Serves 8.
