Swiss Steak Colorado Style
There's nothing like coming home to a fully-cooked, stick-to-your-ribs meal after you've had a long day. This Swiss Steak recipe is one of our favorites, not only because it's so easy, but because it tastes amazing.
1-1/2 lb. beef chuck roast
15-oz. can diced tomatoes
1 c. red wine or beef broth
1 T. onion powder
1 t. garlic salt
1 t. pepper
2 carrots, peeled and sliced
1 onion, diced
1/2 to 1 c. beef broth
Optional: 1 T. cornstarch, 1 T. water
Combine all ingredients except cornstarch and water in a freezer-safe container. Refrigerate overnight, or freeze until ready to use.
To cook:
Thaw beef mixture overnight in refrigerator if frozen; spoon into a slow cooker. Cover and cook on low setting for 5 to 6 hours. If a thicker consistency is desired, whisk together cornstarch and water in a cup; drizzle into beef mixture. Cook, uncovered, until thickened. Serves 4.
