Coconut-Lime Bars
From our cookbook, 101 Cupcakes, Cookies & Brownies, this recipe's tropical flavors are popular at any time of year. Thanks to Joan White of Malvern, Pennsylvania, for sharing it with us.
2 c. all-purpose flour
1/4 c. sugar
1/8 t. salt
1/2 c. plus 2-1/2 T. butter
4 eggs, beaten
1 c. chopped almonds
2 c. brown sugar, packed
3 c. sweetened flaked coconut
1-1/2 c. powdered sugar
2 T. lime juice
2 t. lime zest
Combine flour, sugar and salt in a bowl. Cut in butter until mixture resembles coarse meal. Press into an ungreased 15"x10" jelly-roll pan. Bake at 350 degrees for 15 minutes, or until golden. Mix eggs, almonds, brown sugar and coconut until well blended; spread over crust. Bake an additional 30 minutes, or until set. Remove pan to a wire rack; loosen the edges with a metal spatula. Meanwhile, use a fork to combine powdered sugar, lime juice and zest. Working quickly, spread powdered sugar mixture over bars while still warm. Let cool and cut into bars. Makes 4 dozen.
