When summertime rolls around, we want to be out there enjoying all that sunshine, don't you? A day at the pool or park calls for an easy dinner we can throw together in minutes, and if we can cook it outside and not heat up the kitchen, so much the better!
Whether you spell it kabob or kebab, these dinners-on-a-stick are one of our favorite summer meals. Pick a protein, add some veggies, brush with a flavorful glaze and they're nearly ready. One more reason to love these sticks of wonder? Dishes are strictly optional.
Sit outside, pass out some napkins and enjoy one of these skewered suppers tonight!

Beef Fajita Skewers
Jerry Lyttle of St. Clair Shores, Michigan shared this recipe for our cookbook, 101 Easy Entertaining Recipes. Serve with warmed flour tortillas, sour cream and salsa...a clever new way to enjoy a Mexican restaurant favorite!
1 lb. boneless beef top sirloin, sliced into 1-inch cubes
8 wooden skewers, soaked in water
1 green pepper, cut into wedges
1 red or yellow pepper, cut into wedges
2 onions, cut into wedges
3 T. lime juice
1/3 c. Italian salad dressing
salt to taste
Thread beef cubes onto 4 skewers; thread peppers and onions onto remaining skewers. Combine lime juice and salad dressing; brush over skewers. Grill over hot coals or on a medium-hot grill, turning occasionally, 7 to 9 minutes for beef and 12 to 15 minutes for vegetables. Sprinkle with salt to taste. Makes 8 servings.
