Orange-Melon Salad
Nothing hits the spot better on a warm summer's day than this tasty melon salad from Get-Togethers with Gooseberry Patch. You can even mix up your melon choices...we like a mixture of honeydew, cantaloupe and watermelon for this refreshing fruit salad.
2 c. orange juice
2 slices fresh ginger root
4 to 6 c. mixed melon balls
Garnish: fresh mint sprigs
Bring orange juice and ginger slices to a boil in a medium saucepan over medium heat. Continue to boil until juice reduces to 1/2 or 3/4 of its original amount. Remove from heat and discard ginger slices. Let cool. Arrange fruit in a shallow pan; pour juice over top. Chill for 2 hours to overnight. Place fruit in a serving bowl; pour juice over top and garnish with mint. Serves 4 to 6.
