Marinated Sugar Snap Peas
Could this be the perfect pea? If not, it's pretty darn close. This scrumptious side from Everyday One-Dish Meals is perfect for a potluck or cookout...don't plan on having any leftovers, as it's usually the first dish to go!
1-1/2 lbs. sugar snap peas
1/2 red onion, thinly sliced
1 clove garlic, minced
1/3 c. olive oil
Place peas in a large stockpot and add water to cover; bring to a boil and cook one minute, or until crisp-tender. Drain and rinse; place peas in a large bowl. Add onion, garlic and olive oil; toss gently. Cover and refrigerate at least 20 minutes. Remove from refrigerator and let stand. Serve at room temperature. Serves 8.
