Parmesan Zucchini Sticks
Perfect for a snack and even better as a side, these crunchy, cheese baked goodies from Potluck Family Favorites are nothing short of delicious...make sure to serve with some ranch dressing or warm marinara sauce for dipping!
1 egg
1/2 c. Italian-flavored dry bread crumbs
1/2 c. grated Parmesan cheese
1 t. dried thyme
1/2 t. pepper
6 small zucchini, quartered lengthwise
ranch salad dressing
Place egg in a shallow bowl and beat well; set aside. Mix bread crumbs, cheese, thyme and pepper in a separate bowl. Dip zucchini into egg and then into bread crumb mixture; place on a lightly greased baking sheet. Bake at 450 degrees for 20 to 25 minutes, until tender. Serve with ranch salad dressing. Serves 4.
