Sunset Skillet
Perfect for breakfast or dinner, this simple skillet meal from Coming Home with Gooseberry Patch is one of our favorites. Served with some buttered toast and a cup of coffee, it makes a hearty meal any time of day.
1 lb. ground pork sausage
2-1/2 c. potatoes, peeled and cubed
2 red peppers, diced
4 green onions, chopped
Optional: 1 to 2 T. oil
1-1/2 t. paprika
1-1/2 t. dried thyme
salt and pepper to taste
6 eggs
Garnish: chopped fresh parsley
In a large skillet over medium heat, cook sausage until browned. Drain sausage and set aside, leaving some drippings in skillet. Add potatoes, peppers and onions to skillet. Cook until potatoes are tender, crisp and golden, about 8 minutes, stirring frequently and adding oil to skillet if needed. Stir in sausage and seasonings. Make 6 wells in mixture with a spoon; break an egg into each. Reduce heat to low; cover and cook until eggs are cooked to desired doneness. Sprinkle with parsley. Serves 6.
