Filled with savory cheese and pepperoni, this simple stovetop supper is always a winner.
Shared by Eileen Boomgaarden from Waukesha, Wisconsin, this recipe appears in our cookbook, 101 Stovetop Suppers.
2 t. olive oil
1 onion, sliced
1 red pepper, thinly sliced
3 to 4 cloves garlic, chopped
5-oz. pkg. sliced pepperoni, cut into strips
1-1/2 t. dried basil
1-1/2 t. dried oregano
1 t. Italian seasoning
1 t. garlic powder
1/2 t. salt
1/4 t. pepper
8 oz. pkg. refrigerated 3-cheese tortellini pasta, cooked
Garnish: shaved Parmesan cheese, fresh basil
Heat oil in a skillet over medium heat. Sauté onion, red pepper and garlic until crisp-tender. Add remaining ingredients except pasta and garnish. Cook, stirring occasionally, for 5 minutes. Stir in pasta and cook until heated through. Garnish with Parmesan cheese and basil. Serves 4 to 6.
