Tangy Turkey Salad Croissants
Thanks to Wendy Jacobs from Idaho Falls, Idaho, for sharing this delicious recipe.
2 c. cooked turkey breast, cubed
1 orange, peeled and chopped
1/2 c. cranberries, finely chopped
1/2 c. mayonnaise
1/2 t. salt
1/4 c. chopped pecans
6 croissants, split
Garnish: lettuce leaves
Combine turkey, orange, cranberries, mayonnaise and salt; chill. Stir in pecans before serving. Top each croissant half with 1/2 cup turkey mixture and a lettuce leaf. Top with remaining croissant half. Makes 6 sandwiches.
