2 slices bacon
1/2 c. yellow onion, thinly sliced
1/4 t. salt
3/4 c. water
1 t. Dijon mustard
1 lb. Brussels sprouts, trimmed and very thinly sliced
1 T. cider vinegar
In a skillet over medium heat cook bacon until crisp. Drain bacon on a paper towel, reserving drippings. Add onion and salt to drippings. Cook, stirring often, until tender and golden. Stir in water and mustard, scraping up any browned bits. Add Brussels sprouts. Cook, stirring often, until tender, 4 to 6 minutes. Stir in vinegar; top with crumbled bacon. Serves 6.
