Raspberry-Almond Kuchen
This recipe is delicious as is, but it's so easy to make it your own, too! Strawberries or blueberries would work well, and you could use chopped pecans instead of the almonds if you like. Whatever you have on hand. Look below for the complete recipe, from 101 Blue-Ribbon Desserts cookbook.
Raspberry-Almond Kuchen
1 egg, beaten
1/2 c. milk
1/2 c. sugar
2 T. oil
1 t. almond extract
1 c. all-purpose flour
2 t. baking powder
1 c. fresh raspberries
1/2 c. sliced almonds
In a large bowl, combine egg, milk, sugar, oil and extract. Add flour and baking powder; mix well. Spread batter in a greased 8"x8" baking pan. Sprinkle raspberries, crumb topping and almonds over batter. Bake at 375 degrees for 25 to 30 minutes. Cut into squares; serve warm. Serves 9.
Crumb Topping:
3/4 c. all-purpose flour
1/2 c. sugar
3 T. chilled butter
Mix flour and sugar; cut in butter with a fork until crumbly.
