This bright and cheery recipe from 101 Breakfast & Brunch Recipes was sent to us by our good friend Ashlee Haefs from Buna, Texas. Ashlee says, "Red velvet cake is one of my family's favorites...with this recipe we can have it for breakfast too!"
1-1/2 c. all-purpose flour
2 T. baking cocoa
4 t. sugar
1-1/2 t. baking powder
1/2 t. baking soda
1 t. cinnamon
1 t. salt
2 eggs
1-1/4 c. buttermilk
1 T. red food coloring
1-1/2 t. vanilla extract
1/4 c. butter, melted
Optional: maple syrup, butter, whipped topping
In a bowl, whisk together all dry ingredients. In a separate bowl, mix eggs, buttermilk, food coloring and vanilla. Add to dry ingredients and mix well. Fold in melted butter. Using an ice cream scoop, drop batter onto a lightly greased, hot griddle and cook until edges darken, about 5 minutes. Flip and cook until done. Serve topped with syrup, butter and whipped topping, if desired. Makes one dozen pancakes.
