Classic Chili, Nancy Wise, Little Rock, AR
1 T. olive oil 1 onion, chopped
1 green pepper, chopped
2 lbs. ground beef
8-oz. can tomato sauce
1 c. beer or water
2 cloves garlic, finely chopped
1 t. chili powder
1 t. ground cumin
1/2 t. dried oregano
1 t. salt, or to taste
1/8 t. pepper
1/8 t. cayenne pepper
1 to 2 16-oz. cans kidney beans, drained and rinsed
Garnish: shredded Cheddar cheese
Press the sauté button on a 5-quart electric pressure cooker; add oil, onion and green pepper. Cook until vegetables begin to soften. Add beef; cook until no longer pink. Stir in tomato sauce, beer or water, garlic and seasonings; stir and cook for about 2 minutes. Close and lock lid. Set heat to high. When cooker reaches high pressure, reduce heat as low as possible while still maintaining high pressure. Set timer and cook for 5 minutes. Open pressure cooker using natural release method; let stand for 10 minutes. Stir in beans. Simmer, uncovered, on medium heat for 8 to 10 minutes, until heated through. Serve with saltine crackers and shredded cheese. Makes 4 servings.
