Chilled Gazpacho Soup
Whipped up in a blender, this chilled gazpacho soup can be served chunky or smooth, depending on how long you blend it. Try it both ways and see which is your favorite. Either way, a dollop of creamy sour cream makes a perfect soup topper! Chilled Gazpacho Soup, Suzanne Alexander, South Point, OH
2 to 3 ripe tomatoes, coarsely chopped
1/3 c. cucumber, peeled and coarsely chopped
1/3 c. celery, chopped
3 T. sweet onion, chopped
1 c. cocktail vegetable juice or tomato juice
2 T. fresh parsley, chopped
2 T. red wine vinegar or cider vinegar
2 T. olive oil
1 t. lime juice
1/2 t. paprika
1/2 t. salt
1/8 t. pepper
Combine all ingredients in a blender. Cover and process for about 5 seconds, until well mixed but not puréed. Transfer soup to a large bowl; cover and refrigerate for at least an hour before serving. Ladle into small bowls to serve. Serves 4 to 6.
