Hearty Sausage & Egg Bake
This recipe is from the kitchen of Laura Phares in Greenfield, Indiana. She writes, "This easy-to-fix dish is always a big hit when I serve it at our church’s sunrise breakfast...everyone just loves it!"
6-oz. pkg. croutons
2 lbs. ground pork sausage, browned and drained
6 eggs, beaten
2-1/2 c. milk
1 t. dry mustard
10-3/4 oz. can cream of mushroom soup
8-oz. pkg. shredded Cheddar cheese
The night before, sprinkle croutons into a greased 13"x9" baking pan; top with sausage. Beat eggs, milk and mustard together; pour over sausage. Cover and refrigerate overnight. In the morning, spread soup over casserole, sprinkle with cheese. Bake, uncovered, at 300 degrees for one hour, or until center is done. Makes 16 servings.
