Gingersnap Pumpkin Pie

Gingersnap Pumpkin Pie
15-oz. can pumpkin
14-oz. can sweetened condensed milk
2 eggs, beaten
1/8 t. salt
2 T. plus 1/2 t. pumpkin pie spice, divided
In a bowl, blend pumpkin and condensed milk. Add eggs, salt and 2 tablespoons spice; mix well. Pour into Gingersnap Crust; sprinkle with remaining spice. Bake at 425 degrees for 15 minutes. Cover edges of crust with strips of aluminum foil, if browning too fast. Reduce oven to 350 degrees and bake for another 35 minutes, or until set. Cool before slicing. Serves 8.
Gingersnap Crust:
1-1/2 c. gingersnaps, crushed
Optional: 2 T. hazelnuts, crushed
3/4 c. butter, melted
Toss cookie crumbs and nuts, if using, with butter. Press into the bottom and up the sides of a 9" pie plate.
