Toasted Green Tomato Sandwiches
1-1⁄2 to 2 c. cornmeal
salt, pepper and seasoning salt to taste
2 green tomatoes, sliced 1⁄4-inch thick
oil or shortening for frying
2 to 3 T. butter, softened
8 slices whole-wheat bread
Optional: curly leaf lettuce, basil
mayonnaise
Combine cornmeal and seasonings in a large plastic zipping bag. Shake to mix well. Add tomato slices, and gently shake to coat. Remove tomatoes from bag, shaking off excess cornmeal mixture. Heat oil or shortening in a large skillet over medium heat; fry tomatoes until golden on both sides. Remove from skillet. Spread butter on one side of each bread slice. Arrange 4 slices, butter-side down, in skillet. Cook over medium heat until toasted. Repeat with remaining bread slices. Spread mayonnaise over untoasted sides of bread, if desired. Top with tomatoes and lettuce, if desired. Close sandwich with another slice of bread. Cook sandwiches over medium heat, turning once, until golden on both sides. Serves 4.
