Bacon-Cheeseburger Meatloaf, Brenda Taylor, Lincoln, NE
This meatloaf is my husband’s favorite. It’s easy to make and really, really tasty! I like to serve it with French fried potatoes and a crisp green salad. I hope you like it!
1/3 c. catsup
2 T. mustard
1 lb. ground beef chuck
10 slices bacon, crisply cooked and crumbled
8-oz. pkg. shredded sharp Cheddar cheese
2 eggs, lightly beaten
1 slice bread, toasted and torn into crumbs
1/4 c. mayonnaise
1 T. Worcestershire sauce
1/4 t. salt
1/4 t. pepper
3-oz. can French fried onions
In a small bowl, combine catsup and mustard; set aside. In a large bowl, combine remaining ingredients except onions; mix well. Stir 1/4 cup catsup mixture into beef mixture; set aside remaining catsup mixture. Press beef mixture into an ungreased 9"x5" baking pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining catsup mixture over loaf. Bake at 350 degrees for 40 minutes. Top with French fried onions; bake another 10 to 15 minutes, or until beef is no longer pink. Makes 8 servings.
