Southern Fried Chicken

Southern Fried Chicken, Zoe Bennett, Columbia, SC
It isn’t a picnic without this crisp fried chicken! Served hot or cold, it’s a delicious favorite of my whole family.
3-1/2 lbs. chicken breasts, thighs and drumsticks
1 t. paprika
1 t. garlic powder
1 t. onion powder
2 t. salt
1/2 t. pepper
2 c. all-purpose flour
4 c. canola or peanut oil for frying
Cut large chicken breasts in half, if using. Sprinkle chicken pieces generously with seasonings; roll in flour to coat. Set aside chicken to stand for 30 minutes. Add 3/4 inch oil to a large cast-iron skillet. Heat over medium-high heat to about 350 degrees. Carefully add chicken to skillet; do not crowd. Cover and fry until golden and chicken juices run clear when pierced, turning once, 20 to 30 minutes. Drain on a wire rack set over a baking sheet. Serves 6.
