Amish Baked Oatmeal
Emily Nussbaum of Massillon, Ohio shared this warm, comforting recipe with us. She writes, "Wonderful…there’s nothing more to say!"
1/4 c. butter, softened
1 egg, beaten
1/2 c. sugar
1 t. baking powder
1/2 t. salt
1/2 c. milk
1 t. vanilla extract
2 T. oil
1-3/4 c. quick-cooking oats, uncooked
Mix the first 8 ingredients together until smooth; pour into a greased 13"x9" baking pan. Stir in oats; bake at 350 degrees for 30 to 35 minutes. Serves 6
to 8.
