Blue Ribbon Ham Casserole
Laura Jones of Louisville, Kentucky sent in this recipe...it's a tried & true county fair blue-ribbon winner!
1-1/2 lbs. yams, boiled,
peeled and sliced 3/4-inch thick
2 c. cooked ham, chopped
1-1/2 c. Golden Delicious apples,
peeled, cored and sliced
1/4 t. salt
1/4 t. paprika
1/2 c. brown sugar, packed
2 T. bourbon or apple juice
2 T. butter
Arrange half the yams in a greased 2-quart round casserole dish; set aside. Layer ham evenly over yams, then layer apples evenly over ham. Arrange remaining yams over the apples; sprinkle with salt and paprika. Set aside. Combine brown sugar and bourbon or apple juice; sprinkle evenly over ingredients in baking dish. Dot with butter. Bake, covered, for 20 minutes. Baste with pan juices; bake, uncovered, for an additional 25 minutes. Baste and serve. Makes 6 servings.
