Country Artichoke & Turkey Salad
Geneva Rogers of Gillette, Wyoming shared this recipe along with this note, "We love this salad with its hearty, chunky ingredients." We love the bold flavors combined with fresh veggies and cheese...it's a surprise in every bite!
2 6-oz. jars marinated artichokes, drained and marinade reserved
2 T. balsamic vinegar
1/4 t. pepper
4 c. mixed salad greens
8-oz. pkg. mushrooms, halved
1/2 lb. deli turkey, cubed
1 c. mozzarella cheese, cubed
2 tomatoes, cut into wedges
2 T. grated Parmesan cheese
Stir together reserved marinade, vinegar and pepper in a small bowl; set aside. In a large bowl, toss together remaining ingredients; add half of marinade mixture. Toss to coat; serve with remaining marinade mixture. Serves 6.
