Dad's Giant Cookie
What better way to celebrate a big-hearted dad than with a big, delicious cookie? Thanks to Elizabeth Blackstone of Racine, Wisconsin, for sharing this recipe in our cookbook, 101 Cupcakes, Cookies & Brownies.
2-1/4 c. all-purpose flour
1 t. baking powder
1/2 t. salt
1 c. butter, softened
1-1/2 c. brown sugar, packed
1 t. vanilla extract
2 eggs
2 c. milk chocolate chips
16-oz. container chocolate frosting
7-oz. tube decorator icing
Garnish: milk chocolate chunks, mini marshmallows, peanuts
In a small bowl, combine flour, baking powder and salt; set aside. Use an electric mixer on medium speed to beat together butter, brown sugar and vanilla for 5 minutes. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture; stir in chocolate chips. Spread batter on a 14" round pizza pan lined with parchment paper. Bake at 375 degrees for 30 to 40 minutes, until golden. Cool in pan for 10 minutes. Transfer to a serving platter to cool completely. Decorate as desired with chocolate frosting and decorator icing. Sprinkle edges with garnishes as desired. To serve, cut into wedges. Serves 12.
