Maybe we'll split an elephant ear or funnel cake, corn dogs are definitely on the menu and we can't skip the lemon shake-ups. With so many delicious choices, no matter where we start, it's gonna be good.

Classic Corn Dogs
It doesn't get much more all-American fair food than a good ol' corn dog, like these from Everyday Comfort Food. Sweet breading around a piping-hot dog...No trip to the fair is complete without one.
1 c. all-purpose flour
2 T. sugar
1-1/2 t. baking powder
1 t. salt
2/3 c. cornmeal
2 T. shortening
1 egg
3/4 c. milk
8 to 10 hot dogs
8 to 10 wooden sticks
oil for deep frying
Combine flour, sugar, baking powder and salt in a medium bowl; stir in cornmeal. Using a pastry blender or 2 forks, cut in shortening until crumbly; set aside. Beat together egg and milk in a separate bowl. Stir into cornmeal mixture. Thoroughly dry each hot dog with a paper towel to ensure batter will cling. Insert a stick into each; dip in batter. Pour oil to a depth of 2 to 3 inches in a deep fryer; heat oil to 350 to 375 degrees. Fry corn dogs in hot oil 4 to 5 minutes, until golden. Serves 8 to 10.
